Southmeadow Fruit Gardens specializes in "Choice and unusual fruit tree
varieties for the home gardener", I have purchased items from their
catalog and have had favorable results. They do offer some crab apples,
although I did not see Malus ioensis 'Klehm's Improved Bechtel'. They
may be able to offer some assistance in finding what you are looking
for, located in the northern lower pennisula of Michigan I am sure they
have had experience with deer. The catalog I have is from last fall...

An instructor I had this past winter told of going there to select apple
trees and how they let him sample many of the apples to help make his
selection. They sounded very indulgent, so I suspect they would be
willing to answer your questions. I hope they prove to be a worthwhile
source for you.
