Tubers, Lots of Tubers

I recently started working in the Miami wholesale produce market.  Along the 
platform where the various produce is displayed, I come across numerous 
tubers-- long, short, round, oval, and many colors.  I recognize some obvious 
colocasia sps., but I haven't tried to grow any of them.  If  anyone is brave 
enough to come down to the market, I'll give you the tour.
