Don't have a recipe, but at least here in Phoenixville, it appears to involve slow roasting with lots of onions. A quick Google search seemed to turn up plenty of recipes, including an Asian-style. Most of these are hunting sites, rather than traditional cooking sites -- couldn't find ONE on Epicurious! ;-D
