college-level course syllabi on food security, community gardens, et al


I'm working on using the research database I have to put together some college- level topic-based reading lists (ultimately, a course design) integrating community gardening, food security, nutrition, urban ag, etc as an aid to faculty teaching in related areas, and as a way to encourage faculty to integrate these subjects into their coursework. I'm curious whether anyone out there can point me to other universities/faculty (I'm affiliated with University of Michigan) who've taught courses specifically about food security, etc. I'd love to see their reading lists and/or syllabi and how they compare to what I'm compiling and can enhance this resource.
