Sue,
I'm in zone 7 and I pot my elephant ears. I think I used just ordinary
potting soil. Some pots I bury in the ground and the big one I place above
ground on an empty upside down pot in the background of a bed.
I store the tubers in the garage in the winter and so far they are doing
fine.
