Canna Lily seed germination

DH has a hybrid canna he placed in our pond(s) and this year noted that it has seed pods. He is interested in attempting to grow them from seed (even though I told him it would be much easier to simply divide the clumps!). Any of you tropical/water gardener folks have any advice re...when the seeds are ripe, and what to do next (when you live in z 5b? I refuse to admit that I live in z6!)
