2lbs green or wax beans
2 1/2c water
2 1/2c distilled white vinegar
3T salt
4 sprigs fresh dill
4 garlic cloves, peeled
4t red pepper flakes

Snap stems from beans, then cut beans 3/4 inch shorter than the height 
of the jars. (You can cut them into 1-2 inch lengths, but they are not 
nearly as pretty or easy to eat!) Combine the water, vinegar, and salt 
in a saucepan and bring to a boil. Place 1 sprig of dill, 1 garlic 
clove, and 1t red pepper flakes in each pint jar. Pack the beans in 
the jars and ladle the boiling vinegar mixture over them, leaving 1/2 
in headspace. Cover, and process in a hot water bath for 10 min. You 
may get more than 4 pints from this recipe, depending on the accuracy 
of your scale, or how tightly you pack the beans in the jars!
