I want it to be about 6-7 feet tall. It's on the west side of the house, gets afternoon sun, but not protected from the wind very much. I'm in zone 6. I know the Yaupon Holly can be used as a tree or shrub, depending on how you trim it.

Jesse, I don't recall your zone exactly, but have you considered
Longstalk Holly? Grows to 15 feet and appears to have non-sharp leaves.
Would that be tall enough for your windbreak hedge?

ooops! "LSH Best in locations protected from cold winter winds." Guess it wouldn't make a good windbreak.
