I was able to keep them indoors over the winter, although they were not particularly happy - probably needed more warmth and humidity than I was able to provide.

I second that! Have tried some and have never gotten them to bloom for
me, even with the most diligent overwintering.

Guessing I should have paid closer attention when gingers where being
discussed here, now I found one that is of interest for foliage.... I
would
never get any of them to flower here....
