How about tabouleh?  That's a delicious middle-eastern salad made with 
cracked wheat, cucumbers, tomatoes and mint, with a lemon juice and olive-oil 
dressing.  The fresh mint leaves are a distinguishing feature of the recipe.  Ummm 
good!
