You simply can't visit Toronto without seeing Marion Jarvie's garden 
(Ontario Rock Garden Society). Merlin's Hollow in Aurora is also 
worthwhile. A while back Patricia Singer wrote an excellent guide to 
some great private gardens in Ontario called the good Garden Guide: 
Ontario's Outstanding Gardens. (it's a bit out of date, but many of the 
gardens listed are still around.) It's well worth trying to find. You 
might also consider spending a day in the Niagara Region and visit some 
of the wineries (Jackson Triggs has an interesting garden designed by 
Janet Rosenberg), and there are several nurseries and garden shops in 
the area worth visiting too (especially in the village of Jordan).
