storing garden produce

I'm working on story that will include tips for storing garden produce
through the winter (or as long as possible). Can anyone recommend someone,
like a food scientist, who can provide up-to-date expert information on the
most effective ways to preserve the flavor and nutrients of various garden
vegetables through the winter?
