Hi all,
New, no, but the USDA Complete Guide to Home Canning available online  
as a .pdf is the authority. I haven't seen The New Putting Food By by  
Ruth Hertzberg (available from amazon and others) but the old edition  
is a 100% reliable reference with unusual recipes and techniques. I  
have a BS in nutrition and answered the home ec hotline at Cornell  
Cooperative Extension for many years and those are my favorites.
