Hey Doreen,

Cucumbers become bitter when they suffer from consistant water stress.  Some varieties may be more affected by this than others.

Thanks to everyone for their cucumber critques. My brain freeze has finally thawed! 
 
I taste-tested 20 heirloom cucumbers this afternoon and one was the nastiest thing I've ever put in my mouth. Not only was it intensely bitter, but it left a turpentine aftertaste. I think that jolted my brain into action! You can quit snickering now, Doug!
