Re: cucumber flavor


This discussion has focused  on the sensory experiences of eating cucumbers and how to prepare. Borage and Salad Burnet are flavor/aromatic  mimics so there is still a quality that makes us go "ah cucumber". I don't think it's bitter, sour or sweet though any of those can be present. So maybe it's not taste but aroma. Our cold spring means we are just beginning to pick...not good. We love cucumbers and they are as much a defining as summer garden food as tomatoes in our household.
