You didn't specify, but this contract must be from the man in Canada, not from Timber Press. Does he have a contract with Timber or is he doing the proposal or book on speculation?
 
Not only do you need to ascertain what the payment is, but also what credit will be given to you in the finished book. If you are doing the chapter to enhance your credibility, this credit is very important, maybe more important than the money. You might want to check with an editor at Timber Press for their policy on contributors.
 
You certainly should be paid something for both the chapter and the photos or be given a portion of royalties. As a contributor, you should also be allowed to buy books at an author discount for resale at your garden talks, if you give them.

Last week I received a phone call from a man in Canada. He's had a book published by Timber Press in the past few years and is currently working on a new one. He asked me if I'd be interested in writing a chapter and I replied that I'd be thrilled.

Yesterday the contract arrived in the mail. 3500 words and 8 photographs (I love to do photography but have never submitted anything for printing) but the sentance that  caught my eye immediately stated that as sole remuneration I would receive 2 copies of the book.
