Your post was interesting and not disimiliar to an articleWthat I wrote over the winter for the Winter 03/04 Newsletter of the Herb Society of America.  Geared more towards the reluctant speaker, it includes doing a first presentation with a mentor; how to respond to questions (repeat them for the whole audience etc, and how to respond to something you cannot answer);. AV needs (powerpoint, slides etc - who brings what) and handouts and samples- different ways to distribute them.
 
One of the more challenging venues that I have given presentations is the Home Show environment where no slides can be used, the audience is fluid (and half there purely because of the seating) and you have to compete with the Funnel candy guy. I gnererally resort to the touch/feel/smell the plant and have lots of samples to pass around/share.
