I'm not sure what you mean when you site the seasonal sales in regard to POD publishing - are you saying that doing it now will be too late? If so, I'd revise your thinking. You won't be doing it late, but early for next season. To my mind, the idea of publishing something yourself and using POD is to create books, and websites that support them, that continue to sell with not much on-going effort.
No offense, but when I see a spirial bound book, I think of church cook books and the early days of self publishing. I can't think of an established publisher these days that produces spiral bound books. Why not do it as a perfect bound book?
Are the photos black and white? If so, it will transition pretty seamlessly into POD. Even color can, although color pages are best grouped into one or two sections and is more expensive.
Yes! Make changes! Update and publish it with "revised" or something similar in the title. People like knowing that they have the latest info.
I used Create Space for my /A Garden Wedding /book. It didn't cost me anything upfront. It was pretty straightforward although I did spend time to get the formatting right and it took a couple of tries to be sure that a missed space or other minor glitch didn't change the look in an undesireable way. I paid for three proofs (less than $5 plus shipping) before it came out right. I choose Create Space because in researching the topic it seemed clear that Amazon "greases the skids" for a CS book over Lulu or other services. This may be unfair, and Amazon might be percieved as the bully-on-the-block by some, but it's here to stay and I want to take advantage of their power, not fight it.
After the actual book was done it took me a couple of days to format the manuscript and illustrations for Kindle. After the growing season I will produce a seperate version of this book with full color photos for the iPad. My thinking is that ultimately this will sell more than the b&w version.
Right now I can order copies of this book myself, for the author's price, and they are on my door step in about four days. Others can order from my website or Amazon - I don't have to store them, ship them or think about them in any way. The money automatically is deposited in my bank account. :-)
For a particular type of niche book, like yours, POD is the perfect way to go. And by the way, if you find a way to get more hours in the day, let me know about it. I have three or four more POD-Perfect books in my head with not enough time to produce them.
