Gardening for disabled/elderly


A friend has taken on a project at the adult daycare center where she works. The idea is to create a space in which adults with various challenges -- Down Syndrome, arthritis, early dementia, etc., some using wheelchairs or walkers -- can garden, if able, or just enjoy being IN a garden.
This center is a non-profit with no $ in the budget to actually hire a designer. It'll be done in-house. Sorry.
My friend is looking for advice and information resources. Does anyone here have experience designing such spaces? More to the point, has anyone here written a book, an e-book, a blog, etc. on such spaces, covering design, recommended plants, container types, height of raised beds, etc.?
