The edibility of the ornamental yams is not surprising at all. You all know that heirloom vegetables are good because the growers selected those that tasted good along with any other good qualities. Ornamental yams (they are really sweet potatoes, but called yams in America anyway) were selected solely for their ornamental foliage. The taste was not even considered - much like the cardboard tomatoes that are selected because they are easily harvested by machine and have a long shelf life. In the Seed Savers Exchange catalog, I've wanted to have enough land to do trials on some that sound as if they might have ornamental qualities as well as being good to eat - but I have neither the land nor the climate.
