Easy, quick, nutritious, and totally delicious! From the great Boston chef Jody Adams.
Simple Quinoa with kale
1 cup quinoa
1 tablespoon vegetable oil
 cup minced onion
 tablespoon minced ginger
Kosher salt and freshly ground black pepper
1Â cups chicken stock
 cup blanched kale
Pour 2 cups water over the quinoa and soak 15 minutes. Drain, rinse and proceed with the recipe.
Heat 1 tablespoon oil in a medium saucepan over medium heat. Add the onion and ginger and cook 4 minutes. Add the quinoa, season with salt and pepper and add the chicken stock. Cover, reduce the heat to low and simmer 12-15 minutes. Let stand 5 minutes before using.
Stir in  cup julienned blanched kale.
