Re: Quinoa

A foodie friend sent me this recipe for red quinoa.  Haven't tried it yet, but she says it's delicious.



RED QUINOA & BEET SALAD
 
Make the Quinoa
4cups red quinoa; rinsed well
8 cups water
2 Tablespoon kosher salt
Bring to a boil and lower to simmer.  Cook for 30 minutes.
At least half of the quinoa should be broken open showingthe spirals
Drain any water from quinoa not absorbed during cooking.
 
Dressing
In a small bowl combine:
1 cup EVOO
2/3 cups of Balsamic vinegar
1 1/3 cup lemon juice
1/3 cup of honey
 
Salad
In a large bowl combine:
Cooked Quinoa
4 cups dried cranberries
2 cups red onion diced
2 cups carrot diced 
8 cups diced beet
1 bunch cilantro chopped
zest from 3 lemons finely julienned.  Use the peeler to remove the zest
6 Tablespoon of Quinoa spice mix
 
Add the dressing and mix well.
 
 
 
Spice Mix
1 T each of
Ground ginger
Ground Cumin
Ground Cardamon
Kosher Salt
2 T Aleppo pepper
Combine all in bowl and mix well
 
Roast beets, peel and dice in 1/2 inch dice

While at the GWA Symposium in Indy, I ate quinoa fritters at the hotel 
restaurant.  They were so full of unique flavors and textures.  Does anyone 
have a recipe or know where I can find more information on quinoa recipes?
