I'm drying tomatoes in a food dehydrator, also onions.
I have made up a soup mix by drying onions, carrots, peppers, tomatoes and
any other veggie that I might have laying around. Haven;'t done that yet
this year, but probably will.
Drying food is fairly easy. Slicing is the most difficult thing you have
to do and there are a variety of slicers out there to make it even easier.
Green peppers are cut into chunks, frozen, then put into zip bags to store.
(I can take out one at a time that way, without thawing the whole pak)
Also use some of the green peppers to dry and put into the soup mix.
We make up a good tomatoes sauce that can be used as a speghetti sauce or
in any recipe that calls for tomato sauce. We blend tomatoes, skin and
all, peppers, onions, garlic and seasonings in a high powered blender and
than either can (husband does that) or pack for the freezer.
We would welcome any other garden food storage ideas
