After the pineapple has been picked, of course, and the skin pared away,
salt rubbed over the entire fruit, allowed to remain on for a few minutes,
and then washed away seems to counter-act the high acid content, and all
that remains is the very sweet taste of the pineapple.  You can use a salt
shaker while eating, but for those on sodium restricted diets the washing
gets rid of the salt, and leaves little residue.
