When I bring the plumeria inside I stop watering them.  (I don't plant
to stop watering the one that is blooming until it's finished
blooming.)  I just leave them in the pots.  The leaves gradually die but
it takes a couple months.  I resume watering when I see new leaves
starting to grow, which is usually in March.  I keep them in our sunroom
which can get pretty warm during the day but at night drops down to
about 50 degrees.  I don't know of any way to promote branching.  One of
mine did but the other didn't.
