Sorry Joanie, nearly forgot... This one I have yet to try, found it
in Liz Druitt's wonderful book, "The Organic Rose Garden"... to be
sure, make sure your roses are clean of chemicals before cooking with
them.. and of course roses treated with systemic products can NOT be
used.
1 cup strawberry juice
2 cups fragrant red or pink rose petals
(another source say's Comte de Chambord is excellent for this)
3 1/2 cups sugar
1 T. lemon juice
2 T. rose water
1 pkg. Sure-Jell pectin
Rose water:
Fill a jar with super-fragrant light red or dark pink petals, pour
boiling water over the petals, cover tightly and allow to cool.
Strain off the rose water and store in the refrigerator. Makes
fragrant, brownish-pink rose water that can be used in recipes or as
a skin toner, last several weeks.
Put 1/2 the strawberry juice and petals in a blender for 10-15
seconds. In a stainless or enamel saucepan combine the remaining
strawberry juice, sugar, lemon juice, rose water and pectin. Boil 1
full minute, then add to the mixture in the blender. Blend about 20
seconds more, them pour into sterilized glasses. Makes about 6 medium
jelly glasses.
Water can be used instead of the strawberry juice if you want the
flavor to be more perfumed and less fruity, but the color won't be
quite as bright.
