indoor/outdoor garden in Arkansas

Does anyone have suggestions for an indoor garden for second grade students? We have thought about using a small wading pool. We're thinking about plants that don't require a lot of room, such as carrots, radishes, and herbs.

For outdoors, what techniques have been tried to prevent "vandalism" -- the 2- legged as well as 4 - legged kind? Thanks for your help!!
