Hi Judy,
I tried bok choy this spring. I found it to be a fairly big plant. Try 1
or 2 per sqft. The leaves spread out and drooped during the hottest part of
the day taking up almost a full square. After the sun was off them, the
leaves stood right up and didn't look so sad.
I had started off with four per sqft but had to thin them about 3/4 of the
way through the growing season.
I found the imature stalks a little bitter. I'm not sure if this was due to
picking them early, poor soil, or the variety I used. I'm gona experiment
again in the fall with spacing and other things. Let us know your results.
