I recommend 'Scarlet Nantes'. They produce nice, straight carrots in
less-than-perfect soil. Other nantes varieties may be similar. A note
about carrots that is not evident from the statistics in The Book: I find
them very difficult to germinate, so i threw the one-seed-per-space rule out
the window.

*Anything* but iceberg! (bias showing :-) I like romaine and green leaf
lettuces. The red varieties i've tried have tasted bitter by themselves,
but tasted fine mixed with other greens in salads. Growing red lettuce is
especially useful, because store-bought red lettuce spoils really quickly.
