RE: Sprouts!

Stinky sprouts is one of the most common problems. It can happen as a result
of several conditions, but often happens even if optimum conditions are met.
What really used to bother me is that sometimes they grow perfectly
when -none- of the conditions are met...

Sprouts should be kept cool (under 80 and close to 70 even though that slows
their growth), should be rinsed twice or three times a day, should be
completely drained after each rinse, and should not be exposed to light
until the leaves are trying to pop open.

All utensils for sprouting should be kept -very- clean and one batch should
not be mixed with another. Avoid breaking the roots by shaking or rough
handling. Keep refrigerated once grown, and use quickly.

Although we were able to get 95% of our sprouts to market (Lake Helen Sprout
Farm) and guaranteed them for 2 weeks in the fridge, restaurants that failed
to follow the suggestions in the last paragraph quickly learned to do so.

There are several good references for sprout growing on the web and many
good books, but usually the problem boils down to infrequent attention. I
would be happy to discuss any problems you may have beyond what I may have
already covered.
