what should my seedlings look like?

This is my first time gardening, so have no idea if my seedlings are 
growing the way they should. Note that they're all being grown and 
transplanted indoors for the time being.  Here's what's up:

broccoli:  Three weeks ago, I grew my first set before I bought a 
fluorescent light, so they've grown tall and spindly.  When I 
transplanted them, I put them in deeper into the soil.  The best one 
is now about 5 cm tall, with a nice real leaf or two growing in.  The 
worst is 8 cm tall with only a puny real leaf.  sigh.  So I've started 
a new batch and they should grow well with the new light.

cauliflower:  Planted 2 weeks ago, after buying the fluorescent light.  
All have been transplanted and look to me short and sturdy, and all 
are growing their first set of real leaves.  They're about 5 cm tall.

onions:  Planted 3 weeks ago.  About 4 inches tall. They've all grown 
an outshoot from the main stem.  Will they grow even more outshoots?  
Many still have the black seed cap still on.  Should I cut them off?  

Swiss chard:  Planted 2 weeks ago.  Even though I bought white chard 
seeds, they're growing in with a pink hue.  Does this mean they'll be 
red chard?  or will the pink fade away eventually?

Green pepper:  Planted 1.5 weeks ago.  I read they're really hard to 
grow.  why?  do they take a long time? or are they really finicky 
about growing conditions?  I have 3 going now and they're short -- 3cm 
tall-- and  just starting to grow the real leaves.  

Lettuce:  It's iceberg lettuce.  Is iceberg lettuce really not an 
ideal crop? I bought and planted the seeds before I read that leaf 
lettuce is preferable.  

Pardon my rambling.

I'd love to hear your seed-starting experiences and advice!
