I grow Champion tomatoes as well. Champion is an "indeterminate"
tomato, meaning that it will produce flowers and fruit until the plant
is killed by disease or by frost. These types of tomatoes get quite
large, so I grow mine in a large metal tomato cage. You can also train
them up a stake or string by pruning out the suckers (you keep the
tomato to one major stem). I have not had good success doing this
because I get sun scald problems on my tomatoes. I live in Orange
County (so cal) so it gets quite warm here in the summer. Being in
Ventura you probably get more fog than I do so that method might be ok
for you but it does take maintenance (to keep all the suckers pruned
off). For ease I just do the cage method and let the tomato go
naturally. You can easily prune off any parts that are getting too out
of bounds for your tastes. (BTW, "determinate" tomatoes are those that
tend to produce their crop all at once like "Roma" tomatoes. They tend
to be much more bush like and smaller. Romas do quite well for me here
though, and I do get tomatoes from them all season.)
