Since you *have* lots of space, you can plant more of the space intensive
plants. Plant a pumpkin, a watermelon, a zucchini or two. Put in a block
of corn, and another block in 2-4 weeks (or more, you might put in several
blocks depending on your growing season length). Plant a block or two of
flowers! Put mulch down on all the remaining area, and mark out "future"
blocks even though you won't plant them right away.
I would lay out the space something like this:

Put all your smaller crops that require regular attention together in the
blocks at the "front" of the garden, and put the big sprawling crops at the
"back" of the garden, and mulch the area in between.

I would ask the other gardeners in this garden. I'm sure they have already
tried and discarded ideas that don't work and found ideas that do work.
