To delineate the square feet I have used ABS plastic "poundable
edging" (BorderMaster brand by MasterMark) that you can find in many
garden shops (Home Depot, Kmart, Target). They come in 6 inch lengths
so two hooked together make a side of your square foot, they go into
the ground about 5-6 inches, which keeps plants like Peppermint from
popping up on the other side of the garden (so far anyway), and they
look very nice with the scalloped tops. 

In fact, they isolate a square from the adjoining ones very well.
Yesterday I was out planting and I was able to completely dig up a
square with my trowel, turn over the soil and add compost without
disturbing the adjacent plantings.
