 I can give you the "book learnin'" answer to these questions, since I have
not yet had hands on experience.  If someone knows better, please jump in

Well, not exactly cuttings.  When the main stalk is done producing (3-5
chokes) you cut it back and off shoots arise from the base.  You can seperate
those new off shoots from the parent plant, to create new individual plants,
and keep selecting the biggest and best producing offshoots.

CA, especially in the Salinas, Monteray, San Jose area is "the"
major commercial artichoke growing area. The plants get 6' tall and 5 feet
wide, and are multi-branched.  They definitely overwinter there, without any
special care or mulching.

They are Cynara scolymus, and while I'm not positive that is the same family
as the thistle, they certainly look like a giant thistle, the chokes are the
flower buds.

You definitely get more than one choke per plant.  The largest choke will be
at the tip of each main stem, each stem or stalk is multi branching, and
additional chokes, of lesser size appear on all of those side branches.  So,
on a mature plant, with several main stalks, and lots of side branches, you
get alot of chokes, I don't know how many, but, it's alot!
