I've also tried freezing whole tomatoes. It's quick and easy but takes up more freezer space than I can afford. Yeah, they thaw mushy, but then we sauce them anyway so it's not really a problem. This year we decided to try something different. We blenderized them then put them in a large sauce pot and rendered them down some, and then put 4 cups each of the cooled sauce into medium sized ziplock bags, layed flat in the freezer. Easy, takes way less space and gives you a quick to use product at the end. The frozen sauce slips out of the bag nicely and we just saw off as much as we want with a serrated bread knife. My favourite tomato preservation technique though is drying them. Even better storage in that they take yet less room, require no electicity (once processed), are versitile and most delicious.
