When they're fully colored and glossy. If you wait until a yellow sheen and 
matte finish appear, they're too old.  Good luck and good eating. And BTW, 
cooked eggplant dishes freeze beautifully. Look for recipes of Moussaka 
(Middle Eastern) and eggplant parmesan, for instance. Make your own truly 
tasty tv dinners, wrapped in foil.  Margaret L
