Oregano

I planted a small oregano in an open square and it is doing wonderfully,
sending long shoots out everywhere.  What I need is a way to dry and/or
preserve the leaves to use later.  Also, any advice on what to do over
the winter?

By the way, I picked my first tomato ever out of my new garden and it
was great!!!
