Harvest the oregano just before they are in full flower in the summer or early autumn. Cut the long stems with any flower-heads and hang them in bunches in a cool, airy place. The leaves tend to fall off as they dry so put them in a net. When they are crisp dry, run your fingers down the stems. You can store them in airtight containers, chop them up finely and freeze them in a little water in ice cube trays. You can also wrap them in foil and freeze them.
