harvesting greens

I'd like to harvest some of the edible leaves (sweet potato, beet, etc.)
for use in the kitchen.  Does this impact the production of the main
crop?  

Also I think trimming some of the leaves might help restore order to my
sqft garden which seems rather out of control.
