Actually, if you let cilantro go to seed, you're dealing with a
different bottle in the spice rack called coriander. Not being a
major coriander fan, I let about half a cilantro plant (out of a
dozen or so) go to seed about every other year. I let the pods
open, then I spread everything around the square after the frost
has killed the other plants and I've pulled them out. Those who
like coriander may have different ratios and seed harvesting times..
