Cilantro doesn't like heat. I grow it all winter here in Florida; it bolts
about the time I plant my beans and corn. It tolerates frost, but probably
not a really hard freeze. I also make sure I plant a "bolt resistant"
variety. Some varieties are actually developed to bolt to seed early --
because some people grow it for the seeds -- corriander.
