The purpose of "hilling" is to prevent sunlight from hitting potatoes. You
can add some dirt, but it's not necessary to pile it so deeply that only a
bit of the plant shows. Potatoes are sometimes hard to see when they're
near the surface, and they can pop up quickly and unnoticed. I'd put some
dirt around the plant at least. Margaret L
