Hello Susie- Good point Margaret. In addition, some people like to hill their potatoes to encourage the stems to root as well. Your pototoes will sprout fruit along the stem where it is under soil so hilling also can increase your harvest too. I have seen tater's planted in tires some 7-8 tires deep with potatoes growing throughout the tire tower. The owner siimply piled tires ontop as the plant grew, filling the tires with loose soil.

The purpose of "hilling" is to prevent sunlight from hitting potatoes. You
can add some dirt, but it's not necessary to pile it so deeply that only a
bit of the plant shows.  Potatoes are sometimes hard to see when they're
near the surface, and they can pop up quickly and unnoticed.  I'd put some
dirt around the plant at least. Margaret L
