 It doesn't matter, production-wise, where on the stem you cut.  But, the
operative word is CUT.  I've found that using floral shears or even kitchen
scissors to cut the stems makes for a cleaner break that doesn't damage
plants or fruit.  When you snap off a berry, sometimes extra pressure
exerted does damage to the plant by moving roots or crushing leaves--which
allows disease to set in.  If you are going to dip the berries in chocolate
or want to present them proudly whole and fresh, cut long stems.  Otherwise,
you probably want to cut near the green calyx.
