I would strongly urge you to use an organic mulch of some kind. This
will not only keep down the weed population, it will also help
retain moisture, and as it breaks down it will feed your soil.

Wood chips would be fine. I use them a lot because I can get them
for free. Dry grass clippings would be OK, or rice hulls, or
whatever.

I place a thick layer of mulch on all of my beds, and rarely have to
do anything else other than thin the perennials from time to time.
