Cathy, be sure to separate the cloves so that you'll get the largest
shallots possible. Small ones keep you on your feet in the kitchen longer.
Plant the sprouting ones now, about three to four inches apart at least,
but do not plant them as deep as you would plant garlic or onion sets.
Shallots are sensitive to depth. Look at the clove, and where the bulb
begins to curve in for a neck, call that the shoulder. Do not plant deeper
than the shoulder. The shallot neck should be above soil level, and even
more of the shallot can be out of the soil too. It just needs enough
contact with the soil to grow roots that will fasten down.  Plant the
sprouting ones now, and save the others to plant in the fall. Will they
winter over? Well, I had some planted the year our temp dropped to minus 25
degrees F. That stopped their growth, but when the weather warmed up, they
shrugged and resumed growing.  You'll get better shallots from fall-planted
ones, in terms of size.  Margaret L
