Phantom cucumber plant

Okay, I am completely baffled.  

I have three cuke plants.  Two were planted early and we have been
harvesting from them, the third plant is much smaller with vines only about
12" long. However, to my horror and surprise Sun eve, the third plant was
GONE!!!!   There was one broken leaf on the ground but no other traces of
the plant.  I dug down in the dirt and found some of the root system there,
but all in all it just disappeared.  Nothing else in the garden was
touched, no footprints of any type in the beds, nothing.  I have no idea
what may have happened to it.  I checked my planting guides to make sure I
hadn't lost my mind and there really did used to be a cucumber plant there
(plus I had just seen it Sat eve when I was training it up the trellis).

Does anyone know of anything (other than the two-legged, upright standing
ones) that would take an entire fairly mature plant right out of the ground
leaving no traces?  We live in the country with hardly no people around us
so I'm hesitant to believe that another person did this.
