No, don't do this, it will rot the stem. Even though eggplants and
peppers are related to tomatoes, out of the three, only tomatoes will
grow extra roots from the stem (the reason you bury it deeper each
time). Only plant up to the original soil line. By the way this also
goes for trees whenmulching. Too high a mulch line will compost
the tree trunk and it will kill the tree.
