I planted a single chive plant in a square foot in 1992.  (It is still
producing beautifully.)  It seems to stay approximately within its
boundaries.  However, you must use it quite often to keep it trimmed down
so it doesn't fall over into the adjacent squares.

I also planted a single oregano plant in a square foot in 1992.  It had to
be removed from the square foot garden because it was taking over!  The
same thing happened when I put 2 parsley plants in a square foot.  Some
herbs do not abide by boundaries. :)
